Baked Fish Plaki with Tomato and Vegetables

Baked Fish Plaki with Tomato and Vegetables

Why this works: white fish is lean protein, the tomato, onion, and peppers are a generous layer of fiber, and olive oil and olives bring healthy fat. A light, fragrant dinner that fills you without a spike and sits easy before sleep.

Ingredients (1 serving):

  • 1 white fish fillet (cod, hake, or sea bass)
  • 1 tomato, chopped
  • Half an onion, sliced
  • Half a pepper, sliced
  • 1 garlic clove
  • A few olives
  • Olive oil, lemon, parsley

Instructions:

  1. Heat the oven to 200C.
  2. Soften the onion, pepper, and garlic in olive oil, add the tomato and cook 5 minutes.
  3. Spread the vegetables in a dish, lay the fish on top, add olives.
  4. Bake 15 minutes, finish with lemon and parsley.

Cook time: 10 minutes prep, 20 minutes cooking.

Food order guidance:

Step 1: the tomato, onion, and peppers (fiber) first.

Step 2: the fish, olives, and olive oil (protein and fat).

Step 3: no starch needed. Any bread comes last, dipped in the juices, never alone.

From my journey: fish baked over vegetables like this is my kind of light dinner. It fills me without that heavy feeling before bed.

I lost 24kg without giving up the foods I love. I learned to change the way I ate instead of constantly trying to eat less or follow another restrictive plan.
