Golden Zucchini & Feta Bites
Why this works
Golden zucchini rounds become tender in the middle and beautifully caramelized around the edges, then get topped with cool creamy feta, lemon and herbs. The roasted red pepper adds color, sweetness and a Mediterranean finish.
Ingredients — 1 serving
Zucchini
- 1 medium zucchini, about 220g
- 1 tbsp extra virgin olive oil
- ½ tsp dried oregano
- ¼ tsp smoked paprika
- ¼ tsp garlic powder
- Salt
- Black pepper
Creamy Feta Topping
- 60g feta cheese
- 25g Greek yogurt
- 1 tsp lemon juice
- ½ tsp lemon zest
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh dill, finely chopped
- Black pepper
To finish
- 40g roasted red pepper, cut into small strips
- 1 tbsp fresh parsley
- Few fresh dill leaves
- ½ tsp extra virgin olive oil
- Lemon wedge
Instructions
- Preheat the oven to 220°C (425°F)
and line a baking tray with parchment paper.
- Cut the zucchini into 2cm thick rounds. Pat them dry with paper towel.
- Arrange the zucchini rounds in a single layer. Brush both sides lightly with olive oil.
- Season with oregano, smoked paprika, garlic powder, salt and black pepper.
- Roast for 18–22 minutes, turning halfway, until the edges are deeply golden and the centers are tender.
- Meanwhile, crumble the feta into a small bowl and mash with the Greek yogurt until creamy but still slightly textured.
- Mix in lemon juice, lemon zest, parsley, dill and black pepper.
- Let the zucchini cool for 2–3 minutes, then spoon a small amount of the feta mixture onto each round.
- Add a small strip of roasted red pepper to each bite.
- Finish with parsley, dill, a tiny drizzle of olive oil and lemon.

My meal habit
I like to have a vegetable starter before my main meal, and these are perfect for that. I can have a few golden zucchini bites first, then enjoy my main meal without feeling like I need to eat a separate “diet” food.
I lost 24kg without giving up the foods I love. I learned to change the way I ate instead of constantly trying to eat less or follow another restrictive plan.
