Mediterranean Shrimp & Zucchini Ribbon Skillet

Why this works: This high-protein Mediterranean meal is fresh, colorful and ready in just 20 minutes. Thin zucchini ribbons replace heavy ingredients while juicy shrimp, tomatoes and lemon create a light, vibrant meal that's perfect for busy evenings.

My meal habit: Before a meal like this, I usually enjoy a few crunchy vegetables as a simple starter. If I'm adding bread or another carbohydrate, I enjoy it as part of the meal alongside the shrimp and vegetables.
