Roasted Pepper and Walnut Starter

Roasted Pepper and Walnut Starter

Roasted Pepper and Walnut Starter

Why this works: roasted peppers are fiber, walnuts and olive oil are healthy fat, and together they make a rich Balkan-style starter that slows down the meal to come. A spoonful before your main is one of the easiest ways to put vegetables first.

Ingredients (1 serving):

  • 2 red peppers, roasted and peeled
  • 2 tablespoons walnuts
  • 1 garlic clove
  • 1 teaspoon olive oil
  • Lemon juice or a splash of vinegar
  • Salt, parsley

Instructions:

  1. Roast the peppers until charred, then peel.
  2. Chop or blend with the walnuts, garlic, olive oil, and lemon.
  3. Season and finish with parsley.

Cook time: 5 minutes prep, 15 minutes roasting.

Food order guidance:

Step 1: this starter is the fiber and fat, eaten first.

Step 2: your protein and main come after.

Step 3: any starch comes last, clothed by the protein.

From my journey: a spoonful of something like this before the meal is how I make vegetables first effortless, no salad to build.

I lost 24kg without giving up the foods I love. I learned to change the way I ate instead of constantly trying to eat less or follow another restrictive plan.
